This is the first time that we have created this style of Méthode Traditionnelle sparkling wine, which is barrel aged prior to secondary fermentation in the bottle and has zero dosage.  

Picking this Chardonnay super early ensures the zingy acidity necessary to produce quality sparkling wine in our hot, dry, southern French climate.  The grapes were hand picked and whole bunch pressed to minimise extraction of colour and phenolics before cold settling and fermentation in temperature controlled stainless steel tanks.  Once primary fermentation was completed in the stainless steel tanks, the Chardonnay was moved into 1 year old French oak barrels to age for 3 months. After this barrel ageing the wine underwent secondary fermentation in the bottle and spent 28 months ageing on its lees prior to disgorgement in May 2017.  

The choice to do zero dosage was driven by the quality and purity of the Chardonnay from this harvest and reflects the truest expression of our fruit.  If you are feeling opulent, try this with Coquille Saint Jacques Mornay, or alternatively with fish and chips, for a more accessible option! 

Colour – Pale gold with persistent bubbles and a fine mousse.

Nose – Fresh honeysuckle and orange blossom with a touch of vanilla brioche.

Palate – Subtle, toasty, almond flavours with a pure mineral quality and a clean, balanced finish.
